Bulgogi Syo in Bugis Junction Singapore, founded by Chef Chul Park, aims to revolutionize Korean dining by introducing a unique 3-step Hot Stone grilling process, combining Perfect Fire (Bul) with Perfect Meat (Gogi) to create the Perfect Experience (Syo/Show). This innovative process involves:
SEAR: High-quality meat cuts are expertly seared on custom-made Korean hot stone pans, preserving their natural juices and flavors. The hot stones, heated to 180 degrees, enhance the taste and infuse a smoky aroma into the meat.
TORCH: Bulgogi Syo uses powerful Fire Blasters that can reach up to 1,400 degrees to char and add smokiness to the exterior of the meat.
FLAMBÉ: Individual hot stone plates are used to serve the meats, which are then drizzled with their Special Essence and set on fire in front of diners, adding an extra layer of complexity to the dish.
